Yes, I know....I eat too healthy.

Lunch today - Butternut squash, cabbage, mushrooms, leftover roasted chicken breast, and braised in some tomatillo salsa to bring it all together.

It may be the CPAP...had a bit more energy all morning and not feeling like I need a nap after lunch. I started cleaning out my closets (plural).

I have some stuff I moved to the boy's old closet when he moved out 5 years ago as there was no room in my main one. Haven't used any in that time. Sending most of my long sleeve dress shirts to Goodwill along with a lot of polo shirts. Found about a dozen that still have the tag on them, so a lot of the old ones are headed to where they can be reused. I'm tossing a ton of my old t-shirts as I only wear a few regularly. Just need to clear the pants out yet.

It’s my mom’s favorite, the only other person in our family who likes it is my wife.

My mom was so upset one Thanksgiving when my sister forgot her pie. She never went back to her house for the holiday and instead came to ours, because my wife never forgot to make her pie.

This was my mom's preferred pie filling.
My mother-in-law made mincemeat cookies. She knew I loved them and would make a batch just for me every Christmas. Now the wife makes them but we cut way back on the mincemeat due to sugar.

I don't think there is such a thing as eating too healthy. I hope you enjoyed it.

That almost looks to pretty to eat.

An excellent use of leftovers!

When I try to create something from leftovers it often ends up looking like Russian prison food.

Model trains and watching college football, what a great way to waste a Saturday!
This week, our club has been moving layouts from the basement of McWane Science Museum to the third floor display area for the holiday show beginning next Saturday. We moved the old HO layout, the On30 and N scale layouts up on Monday and began setting them up.
Another member and I went in Wed. to repair some structure damage on the On30 and get the logging train running. Today, I did some clean up, located some rolling stock and glued down some some figures that were laying down on the job.

Our new HO Atlantic, Gulf & Western layout is up and track is all laid down on the main line. But only 4 sections have any scenery. McWane only has enough glass barriers to protect two sections from the public this year. so we will display sections with the bridge crossing a river. The "Magic Water" was poured on Friday afternoon and was not completely hard today. Next week, we will finish details on all layouts and clean the tracks again to be ready for the Saturday public display.
I plan to sleep well tonight.
