A cheese steak has four ingredients: The proper roll, steak, onions, and cheese. NO green peppers! (sorry Willie). Three cheeses are the most common. Whiz, American, and Provolone, Provolone being the only "real" cheese in the bunch. Whiz and American are both processed cheese foods. This doesn't stop them from tasting good, but Europeans aren't used to the level of processing and chemical content in our food here in the states, and generally don't like either one. I have found whiz tastes the best, probably because it's the one I had first, with Provolone coming in second. American cheese is pretty tasteless to me (sorry Louis). It's what you put on your kid's grilled cheese sandwiches to get them used to the concept of cheese. 🤣 A couple of important things about a proper cheese steak. The right roll is important. Soft and somewhat absorbent. Meat to cheese to bread ratio is key. The American and the Whiz melt into the meat better than the provolone, and I like the meat and the cheese incorporated into a gooey delicious mess. You should have to waddle away from the table if you've eaten a correctly made cheese steak. Some places in the Philly area will ask you if you want one "wid" or "widout" "Wid" means with marinara sauce. I tried one this way once and didn't care for it. Marinara belongs on pasta or pizza IMNSHO. Note: these are my opinions (at least the ones regarding tastes and what is correct) and are worth every penny you paid for them. Describing the perfect cheese steak or sub/hoagie/grinder/hero is like naming the most beautiful woman in the world. Ask ten guys, you'll get ten answers and lots of arguing! All that being said, my opinions are the correct ones! 🤣🤣🤣🤣
I have had Capt. Harvey's cheesesteak like Louis , and many others over the years. Probably the best one I have enjoyed was from a place in the strip district of Pittsburg called Deluca's. A proper roll bulging with meat and Provolone cheese and onion. When I make my own I so, like Willie, like to add green peppers and hots. Damn, I'm making myself hungry!!

Cheese Whiz belongs on a Kong toy for the dog to lick out. No human should have to endure Cheese Whiz or Velveeta for that matter.

And I am a heretic, as I do prefer mayo on my cold cut subs, with lettuce, onion, green peppers, banana peppers and hots!

Per my nephrologist at the Mayo Clinic: Eliminate spinach, kale, dark teas, all dark colas (even diet ones), drown yourself daily (drink lots of water). Seems to be working so far, as I haven't had any stones since I had a 6mm job removed from one ureter about five years ago.
I'll pass that along, she is a big Tea drinker. I drink tea, but only the twisted variety.

It’s a little rainy here today. Amazing that the lights stayed on!

Dallas does not do well in outdoor arenas up north, especially in inclement weather. Remember the Ice Bowl?
The Ice Bowl is one of the greatest games in NFL history. Any one little thing different could have resulted in a Dallas victory.

The Buffalo game is only one game, forget it. It all comes down to how a team is playing come the playoffs. Dallas has the "horses" to play with any of the elite teams.

The playoffs are going to be fun to watch!

Afternoon All,

Started out the day with a walk at 56F and a partly cloudy sky. Lows are supposed to be in the 40's the next 2 mornings. After the morning chores including laundry, I headed to the train room and started cutting off flash on the resin parts. I did that for a couple of hours before deciding I had done enough (wearing a magnifying visor). I should finish tomorrow. One thing I don't like is that the stake pockets are molded on and not a separate apply. I will have to drill out the pockets with a pin vise CAREFULLY.

Swal- A K4 or I1sa coming out of a tunnel would be awesome.

Karl- I hope Sharon gets well quickly.

Louis- I have a local cheese steak place locally that everyone raves about, but I generally find their sandwiches kind of meh...

TomO- I hope you enjoyed your field trip today.

rgeiter- Nice photo.

I hope everyone has a good night.

Re Keith Richards: I just looked this up for other reasons on Wiki. Rod Stewart (bear with me) told a short story in Model Railroader related to the presentation of his huge HO layout* a couple or three years back about growing up as teenagers with Keith.

Short version [paraphrasing mine]: Keith was spending the night over at Rod's house. Two twin beds in Rod's room, and he had a Lionel layout running around the four walls of the room, apparently higher up the walls, with the beds below. At some point Keith suddenly sits up and cracks his head solidly on the bench-work underneath the layout.

"That probably explains a lot about Keith's later life," said Stewart.

[so DON'T raise up quickly underneath your own layout, lest you end up doing drugs...too]. :p

*This layout was recently taken apart and shipped to London, as Stewart has now sworn off living in L.A. for good. Which does beg the question: Has Rod been to LONDON lately either? I don't think he's gonna find living in London all that much better than living in L.A. But that's just my view.

Well howdy there internet peeps and those younger than Keith Richards

It's a shagged out Troy again.

My long squawk today has been waiting for the wife to get off a conference call this morning so I could work on the doors again.

First up, take half an inch off the bottom of the other three.

One nice thing about the Craftsman saw is that its blade is 5 inches fro the edge of the guide fence. The cheap arsed one I used before was some hokey measurement like 4 3/8ths inch.

Got the master bedroom door hung, and realized after the fact that someone had, indeed, taken a saw's blade's width off the side of the door... The 50-year-old building settled enough that the doorframes aren't quite plumb.

So I sat and stared at the frame, with the door that wouldn't close.... and I considered popping the trim off the frame, breaking out the shims, and re-plumbing the door frame.

And I stared

then I knew what this job called for....

I let the mini-sledge convince the doorframe to get back into plumb. I'll need to caulk along the trim on that side since I knocked a few layers of paint build-up off.

Nap time now. Tomorrow, I might be able to get two more doors installed, now that I got my mini-sledge out of the garage to help convince the door frames who is boss.

I point down to the wife's office and say, "Sorry, frame, but the boss down there is making me do this..."

In 99% of cases I'm not a cheese whiz fan either. We don't keep it in the house. But on a Cheesesteak it works, probably because it, like Velveeta and American cheese are "made to melt". At Geno's in Philly, they agree that Provolone is the way to go, but they go through 10 cases of cheese whiz a day.

The only reason I prefer mayo is the oil&vinegar makes the bread soggy.
I wonder if they make oil&vinegar flavored mayo….
I think you can get mayo with olive oil in it. If it made your bread soggy, someone used too much of it. There is also methodology. You put the meat on the bread, then the veggies, then the oil, vinegar, and something I forgot to mention: oregano! The meat acts as a barrier and doesn't let the bread get mushy. Banana peppers and hot pepper relish are optional and can be good if you use the correct ones. 😁 Now I'm hungry for a good hoagie and a cheesesteak!

long time away from puters & such. takes a while to get thru pages
I'll enter the sandwich shop with this: French Dip? Donair? Mayo vs Miracle Whip I prefer Miracle as it is a bit tangier.
Breaky was quite some time ago, now I'm hungry.
Still hovering around the freezing mark, with no acuumulated snow. & none forecast for a wk or 2

Is anybody interested in a free ride in a helicopter for 4 people..? I'm looking for 3 more people to join me. We leave early Friday morning from Tampa and will fly to Sanibel Island where we will have breakfast, then on to a yacht for lunch. We’ll fly along the coast before flying home again in time for dinner. If interested, let me know ASAP. Preferably someone with a helicopter and a yacht, otherwise we can't go.....
