Snarky Old Fart (in training)
Well, howdy there internet peeps and those who appreciate a trip to Culvers
It's troy.
The one thing I haven't found at Culver's is a brisket as good as mine.
It was yumm!
As was the wife's cornbread. She left it in for a minute longer than she usually does, and three minutes longer than I did when I tried to make her recipe. This one was done in the center. But, we always attack it right away, and the first piece out of the pan is a crumbly mess. We' agreed to give it another 10 minutes of cooling on the counter before slicing into the cornbread.
After dinner, I cut down the rest of the brisket. It began as just shy of 17 lbs before I trimmed it last night. I suspect it was about 14 pounds when put on the grill.
As I cut the left-overs, I put about 1/4 to 1/3 lb into individual snack bags - cutting out the fat that doesn't render completely. Especially that accordian piece between the two muscles on the point end.
Even after that I had enough snack bags full of meat to fill a gallon sized freezer bag. That will last me about three months, having one or two each week for lunch.
For the rest of the evening, I'll be chillaxing with the Lance Mindheim book and a Dr. Pepper Zero Sugar. Maybe two. You never know about me.
