A single track engine shed crossed my mind too but I think I want it in the open so the fuel truck can drive up the service road to the track.
However, it seems like what I thought were exclusively double track sanding towers can easily be used on a single track

To tell you the truth, in the modern world, you can actually contract out locomotive fueling services.
Pay them extra to sand the thing too.

Setup one of your layout characters in the fuel business with a surplus truck.
Call it "Luckie's Fuel". Lucky to sometimes get it because sometimes you don't!

Walthers has a kit.
Easily modified or build as whole and place blank ties to simulate old trackage, next to current rails.

Yes, just build 1/2 the tower.

I did the hopper on a frame thing for my sanding. Even tho it is two track. Only one runs under it

Could just have the crews hoist up bags of sand from a shed.
You won't be popular, but the job will get done.

That's the way the Light Rail Vehicles were sanded at the transit system I worked at once upon a time. They hated it.
