What are my options when it comes to remote coupling and uncoupling?

I have had fun making tiny layouts with Z scale, but that has all been in circles. I want to try a working layout without an enclosed loop. Several sidings at factories and such. And I want to be able to drop and pick up cars at each. (timesaver/inglenook style)

What options are available in the various modeling scales to do this coupling and uncoupling?
 
In HO scale any magnetic coupler will work. Kadee is the best. A magnet is hidden under the track at the point you want to uncouple, the metal "air lines" on the couplers push against each other, opening the knuckles to uncouple the cars.
