Depends on what make of coupler you are talking about, probably Kadee is the most popular and the #5 is probably the most used; however the reason they make a lot of others is due to the fact no two manufacturers make their equipment at exactly the same height or the coupler pockets in exactly the same location or the same length.
 
Kadee's knuckle couplers are considered "industry standard". All their HO couplers will mate with each other, and they make a variety of styles for fitting onto all the rail car manufacturers' equipment.

I converted my fleet of cars but a friend of mine did not. He continued using 'hornhook' couplers, which used to come standard on rolling stock. So I provided a "conversion car", which had a Kadee on one end and a hornhook on the other. This also allowed me to migrate my fleet slowly rather than doing them all at once.
