A few plant species - How do I do this??

Hey all, I have a quick question about briar patches. I haven't spent much time on the scenery end yet so I'm nervous about making bushes. Some advice would help mellow me out!!! :D I'm not sure how many people will know the kind of briars that I am talking about but I need to make some green briars. Some people that I know call the saw briars. They grow way up into the trees like big vines and are about 3/8" - 1" thick at the very most. Also, we have a kind of wild rose bush here too and I would like to model both of these things (I am making a few rabbit/small game hunting scenes!!!) Sorry I am not sure of the name of the roses but they really hold the rabbits so I would like to model them. And hey I may as well ask about goldenrod and queen anne's lace while I am here as well! I guess also I should mention that this is an early/late fall type of scene. Any advice on what materials to use/how to go about making them?
