what is the best material for imitating brick,

For buildings, I think brick pattern styrene is a good choice, especially for a beginner. It's easy to glue and paint, and you can make a very realistic brick building using styrene.

Jim is right about that, N Scale Architect makes great brick sheets in styrene plastic. I bond them to a Evergreen .040 sheet stock core to make just about any brick building in HO/S/O. '
This little building is in S and has built up brickwork details that were made simply by layering pieces of brick sheet on each other to get the ornate trim.
