As I plan to make steak today, this video comes out. Timing was good.

I do agree that starting with a room temperature steak does not help with making the crust as it tends to overcook. Sous vide makes it worse. The way sous vide everything does it is by using a flame thrower, but they found that propane is the best choice as using a butane torch tended to give it a strange flavor.

If the weather holds, I'm going to try the cold steak method today.

Interesting that despite saying that resting a steak is not needed, they both still will do it.
You don’t have to go directly from the water bath to the outside finish. A lot of people will cool the sous vide cooked steak in the fridge. The do the outside finish.

I usually don't spend the time to do that. I do try to cool it down a little bit, but in the room. I don't put hot stuff in the fridge. I may play a little bit in winter with the natural outside fridge.

Good morning, Coffee Shop! New face pulling up a chair - I'm Hannah, and I hope a newcomer is welcome here.

Chadbag, I hope the weather holds for your cold-steak experiment today - nothing like a good crust to start the weekend. And Kusojiji, did the Kato N-scale RhB get its run last night? I do hope you'll share those photos; a four-car consist sounds lovely.

Seeing all this talk of myths being put to the test, here's one of mine: I once tried to write a novel about trains, but I couldn't get past the first chapter - I kept going off the rails.

I run a little puns site called Laughtypuns - a coffee-shop thread full of jokes is my natural habitat, so I had to say hello. Have a wonderful Saturday, everyone!

Hi Hannah, welcome aboard! Puns are good and you'll find a lot of Dad jokes here as well.

My steak experiment didn't go so well. First off, they were too thin at about 1/2 to 3/4 inch. But the big mistake was that I put both into my cast iron pan at the same time, causing them to basically boil. When my brain started working, I pulled one out and tried to salvage both by continuing to fry one at a time, but it was too late. Taste was good, but should have been better. And it didn't help when it started drizzling on me. But got it all done and the food moved indoors. As I was carrying the hot pan, it started splattering a little as the rain drops started hitting the hot oil.

Overcooked by my liking, but the wife and daughter like their steak med, so it's fine for them. I like mine browned but still mooing.
