I always cook everything with the fat side up. My thinking is the fat will work its way through the meat.

I like your rub! Mine is almost identical. Instead of the seasoned salt I use sweet Hungarian paprika. Paprika is not sweet, it's just how they call it if it is not spicey. Sweet as opposed to hot Hungarian paprika.

I never use water with beef. I think it steams the meat and I don't want that.

I could be completely wrong about everything! That is just my way of cooking.

Enjoy your beef, I wish I could sample it!
Louis: You are spot on. No water in/with any meat as it will be tough! Well, unless you are doing some sort of stew that boils/bakes at a higher temp for hours.

Afternoon All,

Started out at a cool 66F and slightly breezy. It was refreshing especially since I slept like crap again. Today I did a couple of small chores then worked on trees again. I've completed the middle and right sections and have started on the left side. I figure I need at least 40 more trees to exchange with pine trees before I start adding to what I already have.

Joe- Fun times with the traffic. Is that a Pennsy Trainmaster in the photo?

Guy- Interesting ferry. How long is the ferry ride?

Louis- Nice pictures of the B&O power lineup. Although every vet appreciates your sentiment, Memorial Day is really to remember those who have died in service to their country.

Willie- Nice scenes. I got my cabinet from Mom and Dad's after Mom passed. Beggars can't be choosey! In addition to what others have posted I think that we the pawns are being manipulated through fear. This is no different than every year in the past there was a threat that the military appropriations would not be passed so the military wouldn't get paid. Same old BS, same useless self-serving politicians and political parties.

I hope everyone has a good night.

Latest house update:

My son and I filled in a small void by a beam support with concrete. In other news they've been setting roof beams and also cutting joists getting ready to install on the north side (one is installed). A couple beams yet to install -- they're working out how to get them in as we messed up some calculations and missed the beam attachment pocket things (Simpson style GLB) -- either didn't install one as it appeared to us the beam was not tall enough to need it or didn't set one deep enough by a couple inches). So for those two beams they are working out a retrofit way of attachment. Others are installed. Some go from concrete wall to concrete wall and others only on one side, and stretch to a framed section inside, or are totally only on framed sections.

The first pic below shows after the two beams -- center ridge beam and north beam were installed but no joist yet -- the rest show the other beams and the one joist that has been placed.

He was optioned to the Minors per MLB.com...Surprised they gave him a shot before he was ready.
I thought he was ready! He has had some good outings. He has even been dominating at times. His ERA in AAA was 2.32 overall.

Rodriguez tends to struggle with command. Big league hitters are far more patient. When you struggle with command good hitters will sit on your fastball. Even Nolan Ryan struggled early in his career because of lack of command. That is why the Mets traded Ryan to the Angels. No matter how hard you throw it is tough to get your fastball past good hitters who are looking for it. Especially if you leave it in the middle of the plate!

The Mets traded three other players to the Angels with Ryan. The Mets got Jim Fregosi. Leroy Stanton was one of the players who was traded with Ryan. He had better numbers after the trade than Fregosi. Stanton hit 27 homeruns and drove in 90 runs in one year, 1977. Fregosi's best years were already behind him.

I hope the Birds don't give up. There was only one Nolan Ryan, but Rodriguez will be back, better than ever!

My Hungarian wife makes goulash with beef and somehow the beef it is not dry, the beef is moist! I don't know how she does it, I think it is some kind of witchcraft. I tease her saying "you are a white witch"

Real Hungarian goulash is like our beef stew with different seasonings. It is fantastic!

My Mom made her version of goulash. Elbow macaroni, ground beef and Campbell's tomato soup. Not anything like Hungarian goulash. I liked it and ate lots of it.

God rest her soul my Mom was not a great cook. One thing my Mom made better than anybody, sour beef, and dumplings! She learned that recipe from her father, a German immigrant.

Willie: I'm not sure...so much misleading information circulating. I'm of the opinion that this is fear mongering. Sec Treasury has changed the date to 6/6 from 6/1, so that raises another question. The whole act is part of the ongoing political theater and accompanying food chain.

yes anything either side says right now is geared to fear-mongering so they can win political points to push through their version of "screw the taxpayers/screw the country".

That does not mean that they are totally made up. A lot of them are based on truth but twisted to meet their political goals.

Speaking of beef fat, my wonderful and beautiful wife mixed some of her homemade hamburgers. We buy 27/73 ground beef. I like the juicy burgers it makes. We will be cooking them on my old Weber charcoal Kettle. I use Kingsford's long burning coals. She used my meat seasoning and a little Lea and Perrins Worcestershire sauce.

My meat seasoning is equal parts of salt, black pepper, garlic powder, onion powder and sweet Hungarian paprika. I used to use more salt, but I cut back because my wife's blood pressure is sensitive to salt. My little Angel is far more important to me!

Good Afternoon

Guy- Interesting ferry. How long is the ferry ride?
Curt - That boat ride will be 1hr 40mins. We'll leave Vancouver and land in Nanaimo on the island. Then, we'll drive down to Victoria and tour up the western side of the island.

Chadbag - Wow! Are you building a house, or a really big church?;) Your going to need to hire cleaning ladies!

Have a great night, folks!

Afternoon all,

So far been a nice day. Family fighting learning a new game behind me while they think the old man fell asleep in his chair. I did but not as long as they thought.

All the cooking talk is making me hungry again. When I use the smoker, the meat gets a dry rub overnight with nothing but a 50\50 mix of kosher or pickling salt and black pepper. Smoker always has water as it helps the smoke and moisture.

Grilling burgers, my preference is an 80\20 mix. Flares up and smokes less than 73\27. Although I have been buying 85\15 as late due to it being cheaper at the local meat market. IMO anything leaner than 80\20 tends to be drier.

Is that a Pennsy Trainmaster in the photo?
Curt: No that's a Baldwin RS-12 non MU Passenger version with cab signals and trainphone. Frequently found just about anywhere. Bought for the Pemberton Local (Push Pull train into and out of Camden NJ). I use it as a shifter, and have it haul a couple of steam heat MP54 coaches.

A lot of them are based on truth but twisted to meet their political goals.
Chad: And that's what feeds my skepticism. It will be like a Dallas Cowboy game, resolve it at the last minute while the chumps in the stands are on the edge of their seats...

Louis: Looks like the Rangers have the Birds number... 5 - 3. 👎

Memorial Day...The day we set aside to honor those killed in our wars...From the War Between the states to present. Previously known as Decoration Day. Used to be May 30, now the last Monday in May.

Veterans Day...November 11 each year. Honors all of our Military Veterans. Used to be called Armistice Day, marking the end of the First World War.
In Canada, UK and other Commonwealth Countries, it is Remembrance Day to remember those who were killed in war.

With regards to water and brisket. I am not an expert, but was reading up on brisket today (due to a mention of it on a Yiddish FB group I am a member of, though I am not jewish [I like German language derived groups and a jewish friend invited me). It turns out the long and slow cooking of Brisket needs water added to the process as the braking down of the connective tissue requires it. Without the water the excessive connective tissue found in brisket won't break down enough or something like that.

(Another win for sous vide as the meats own juices will supply the water to do this)

I understand that. I believe every veteran is willing to give his/her life for us. That is more than enough for me!
Curt, I have thought a lot about what you said. Now I better see your point. You are a man of subtlety. I admire that. Subtle words often take time to sink through my thick skull. 😳
I don't want to detract from those who made the ultimate sacrifice. That would be unfair to them and thier loved ones. I will revise my post to better reflect that sacrifice.
Thank you!

Now that you say that I remember a deli on East Lombard Street here in Baltimore that served traditional Jewish deli foods. My favorite was the pastrami. I asked them "how do you make it?" The answer was "it is smoked and steamed with a blend of salt and spices". I did not think anything of it at the time. I was only about 18. My only experience with grilling was on a little charcoal hibachi grill I took to the beach with me to impress the girls. Unbelievably my hamburgers and hotdogs did impress the girls. "The big man can cook too!" It didn't take much for me to impress teenage girls.

Thanks, Chad, for all your in-depth analysis. I for one really appreciate and enjoy them!
