Can anyone point me in the right direction. I am looking for detailed instructions on coupler conversions, how to install and adjust couplers, how to weight cars, and general maintenance on rolling stock and locomotives. It would be great if there was a video on couplers a how to type video. I would appreciate any information you can provide. I am trying to convert all my cars to micro trains or accumate couplers.

For weights, you can go to the NMRA website, they have the recommended weights for freight and passenger cars.
You can go to Microtrains' website for coupler conversions for locomotives, as well as lists of truck and coupler assemblies.
Most modern diesel locomotives will take standard Micro trains couplers (many of those available pre-assembled, just remove the old, and install the new), and almost every modern freight car can have its truck and coupler assemblies switched out easily.

Per the NMRA's Recommended Practice RP-20.1, the correct weight for N-scale cars is:

1/2 ounce + .15 ounce per inch of car body length.

not sure about the weight issue but as for coupler conversion if you are interested in spending the money (I found it to be worth every penny) the conversion book from Microtrains very much comes in handy. well that is IF they are still available.
