Looking to do cross overs from one parallel track to another. The photo is a Walthers Code 83 #6 Single Crossover Turnout. Can't find a piece like this in Code 100. To do the same with Atlas sectional track, would I use two #6 Customline turnouts, or will those not line up correctly?
Look up Shinohara. Walthers took over those at some point and made it into C83. But eBay still has plenty of old C100 shinos.
Correction - old shinos do exist in C83 as well.
You might need to rewire them.
I'm not seeing any ready crossovers at this point, but I think it is trivial enough to buy a pair of switches and assemble them into x-over.
I haven't bought Atlas switches for over a decade. Unless there was a drastic change in tooling, In my humble opinion there is no need to consider that product at all. Performs badly and It does not look good at all.

They do have them in #4 if you are short on space. Even my longest locos negotiate the 4s , but they look to strange doing that )
If you not interested tinkering with point rails and wiring I'd say use Peco switches. They readily come in C100 , work and look great.
Two Customline #6s will give you a track center of 2" on the parallel tracks. To make it wider one simply adds a short straight between.
One could also use two PECOs.
And if you ever want a double crossover 4 #6 turnouts (2 left, 2 right) and a 19 degree crossing will make a double turnover with a track spacing of 3-1/2", IIRC.
It is the spacing between parallels that affords you a nice geometric meet in the middle of any kind of crossover, providing you're using two identical turnouts. There's no reason not to use whichever code of rails you need, to (due to cash flow or availability). You just have to make two allowances, one for rail head top bearing surface disparity and for the distance between track centers so that you don't have that horrible kink where the two divergents meet.
