Storebought lichen is already treated, and colored.

I have used lichen on my layout for nearly 45 years. Some of the lichen on my layout now is some of the original store bought lichen from the '60's. :)

I have a lot of untreated lichen on my layout, and other than the color fade, and drying out, I have had no issues with it. I'm going to treat and dye some of the stored lichen I have here pretty soon, and see how it turns out.

As with any materials gathered from nature, it's a good idea to boil, bake or nuke in a microwave the material, to make sure it's free from critters that may live in the stuff.

I don't know of any health issues from lichen or moss.
