Good Morning ALl ! From sunny Buffalo .Holy smoke we have a high sitting over us for a few days so have to enyoy it. Biggest promlem is my tomatoes are all ripening at the same time. Well gusee I'll have to make some sauce or something . Ray looks like your having lots of fun down state. Well gotta get going and see what my little friend is up to so hope you all have a good Friday !!!!
Paul, "can" them. They sure would be good for soups or just a side dish, this winter. You could always buy some to go with them if you don't have enough for the effort. The wife always put-up about 20 quarts. I think all she does is blanche the tomatoes, peel them, and place them hot in the sterilized jars...I think. They seal up just fine.
I remember as a boy in LA county, Calf. there was a place my parents draged us to, (Jim might know it's location and exact name) if i'm close to the name, aladens lamp?.........I remember the food being hot! Still Like Mexican food better! I remember El Vera St(sp) in LA.........O' well all hot spicy food goes good with beer!
Rex sure hope your wife is using a waterbath canner to do those tomatoes! Acid foods can be processed in boiling water, all other home canning needs to be done using a pressure canner for safety. There was a time when almost all my families vegetables came from the backyard garden and were feeding us all year long. With just me at home now, I still do some canning when I have the extra.
I will be putting a few of the photos from last nights session over in the WPF thread soon. Here is one of the last shots I got of LV 211. The white trail at the top of the photo is a jet overhead coming into Rochester Airport. The shot was exposed for 30 sec. at f29 in ISO 400. Unfortunately the engineer didn't flash the lights until after the photo was done. After this shot, I didn't have the equipment to get any good shots.
Ray, just did a double check on how she cans. She puts the tomatoes in hot water (blanche), then peels them, cut them up, put back into pot, add a little water. Then they are salted to taste, brought to a boil, place into sterilized jars, place lids in boiling water and then place lids on jar and seal. When cooled the lids vacuum seal. The most important part is to have the vacuum seal. This is very safe and easy, but you are correct in making sure of the boiling and seal. When she used to can other things, she always had a pressure type canner.
Rex, you might want to have her check out this: http://ohioline.osu.edu/hyg-Fact/5000/5336.html The way she is doing it is no longer considered safe......... I remember my grandmother canning that way, but better to be safe.....

PERSONAL NOTE
Well looks like Fay is going away, Haven't seen any damage here in spring hill. We got 3" of rain Brooksville got 6" and Citrus county had some damage and some flooding. Fay brought us some much need rain! Looks like two more storms are lining up in the atlantic comming this way! It is that time of the year! The media clames 6 die here due to fay, couple of them were drowings, why must people swim in storm surges? If you go on to a beach during a Tropical storm or hurrican....don't cry if you get hurt! and Just accept your an Idiot! sorry for the rant
Ray: Thank you for the link. Heck I don't know; it looks like the boiling water and boiling water canner has about the same result and would kill any bacteria or disease and they couldn't survive a vacuum. Things and methods change and sometimes we are a bit slower to accept or do some of them. Getting so everything we did that got us to our present age is wrong. Guess we are just lucky.
BTW: Great evening photo of that RS. Looks like he is just kicked back and waiting for something to do.
JIM: looks like you will have something falling from the sky in the morning.
It was a beautiful day here in sunny Colorado. Not too hot...not too cool. Ahhhh...
Jim...that explains all the 'dust' in the air in Aspen Actually, my friends live a few miles out of Aspen in New Castle. They live about a country block from the Colorado River. Lovely country. I have spent some time in Aspen, but it is a bit rich for my blood. The slopes look decent though and someday I might try skiing there.
Rex...Homes in Colorado are absurdly expensive. When I was in NC, I would watch the real estate channel now and again and was amazed that you could buy a nice house there for under 100,000. Not touching anything here for that. Two or three years ago the median price for a home in CO was about 350,000. And yes...we did have an influx of Californians' invade our state. We tried to blizzard them out and many of them could not handle the weather, or rather the promise of a Colorado winter. Our winters are actually pretty mild. We may get a foot of snow on Monday and it is usually completely gone by Wednesday.
Well, Denver and the surrounding areas are gearing up for next weeks' Democratic National Convention. I am so flippin' glad that I no longer work downtown! What a mess that is going to be! The city is actually going to close I-25 for 5 hours whilst Obama is speaking at Invesco field. Shutting down a main interstate highway through a major city seems just a bit off. Some 'people' were being investigated last week because it was revealed that they were storing feces and urine to throw on any protesters from the opposing party. Ew...nice. They are already threatening to 'recreate '68'. Could be a bizarre week in Colorado.
