The May and June 1997 Model Railroader's have an excellent two part article on modeling the auto industry (pre-WWII and post WII). An older auto plant would have a variety of buildings representing many expansions. Modern plants might be more 'boring' structures, but the same can be said of any modern manufacturing plant to be honest. I'd say having a 'smorgesborg' style plant would be protypical at least through the mid 70's, even up to the early 80's.
