For that drop from mainline to the siding track at ground level, I'm wondering if that is a pretty quick drop between the two different heighths, or if I need to stretch it out for a ways? Thanks.

It's a fairly fast drop but not enough to uncouple cars.
I use HO cork on the mains with N cork on sidings so I just rasp down the higher HO stuff and use a little balast to fill in the "gaps".

I just had that with my yard, going from HO cork down to the foam base, and I just let the track lay naturally by itself, and squirted some caulk under the track. I would say the distance is about a foot.

it may be easier to build up the area beside the track, covering the cork and giving the appearance of it being lower without it actually being lower.

If you used cork roadbed on the sidings, you can sand it down with a sanding block to get a nice slope down to (almost) ground level.
