Are smaller cars such as the ore cars subject to derailment? Mine seems to want to jump track in my yard. Not sure what's going on there.
Generally smaller cars track better than longer ones.
I'd check your wheelsets, maybe the weight of the cars.
I "tune" all my trucks with an axle cutter and use IM metal wheelsets with weighted cars and have no (okay... little) problems.
Allen, I assume you are having problems when you're backing the cars. The main problem is weight. Those 27' cars just don't have any room to be correctly weighted. Most modelers will add some BB's and white glue to the bottom of the hopper and then make a false bottom with an iron ore load so the cars track bettter. Check the wheel guage and couplers to make sure they are swinging freely. As Rico said, some good quality metal wheels both add weight and help tracking.
