How do Kato N scale magnetic knuckle couplers work?
And is it necessary a special track?

They don't work all that well. They look nice and the idea is nice but compared to Micro-trains they don't work as nicely or predictably.
What you need is a magnet in the track, whether it be under the rail in the roadbed, or one that sits on top inbetween the rails.
is there a good general all around replacement micro trains type truck / coupler set with low profile flanges (for code 55) that would be easy conversions? i have alot of older stock cars that are never opened that i had aquired over the years before i decided on the code 55 track. really dont want to get rid of them, even though there older cheapo's. thanks in advance for any help ryan
As far as I know all MT truck/couplers come with pizza cutters but you can buy bulk packs of the lo-pro wheels from MT or go with someone else like the Fox Valley metal wheel sets where you get lo-pro's and a nice detail, metal, non-magnetic wheel.
