Re-painting HO shipping containers, need advice

If you have an airbrush, that's always the best choice. If you want to use spray cans, apply the paint in very light mist coats. Don't try to get complete coverage all at once. That usually leads to a repaint.

I paint mine Rustoleum Dark gray primer that way you will get shadows where you need them and it also hides a lot of the pre-markings from the factory.

I've used this method, and I also heated the spray can up in some warm water, seems like the mist had a better pattern to it.

Yes, this is especially important if you live in a cooler climate, or during the winter if your hobby room is cold. Spraying from a cold can may lead to the "orange peel" effect when it dries; this applies to clear coats as well (e.g. gloss coat, semi-gloss, etc). I usually just run the sink until it gets hot, then fill a plastic cup about half full and set the spray can upright in it for a few minutes. No need to use super-hot or boiling water.
